Our pigs, belonging to the dehesas of Andalucia, Extremadura and Salamanca, Are bred, nurtured and raised and monitored steadily. Feeding on the natural pastures and acorns of these regions we ensure their over the top quality.

This bestows upon them the juiciness and flavour befitting of the best iberiam hams.

IBERIAN QUALITY STANDARDS

All our products follow the Iberian standards. Continuous audits are carried out by Hycer, the D.O.P. Guijuelo, Land of flavor and Calicer, to certify the origin and quality of the products that we later put on the market.  
Mother pig 100% iberian and father pig 100% duroc = 50% iberian breed It presents a greater proportion of meat, in addition to a greater infiltrations, which gives it greater juiciness and a lower percentage of salt. This leads to a cheaper ham due to the lower fat factor on the outer parts.

With a more marked flavor, it combines the characteristics of the two extremes, a great juiciness without losing the softness of the typical flavour that acorns bring to this product.

DESIGNATION OF ORIGIN GUIJUELO

In 1984, Felipe Hernández Jiménez, together with a group of cattle ranchers and manufacturers, perceive the need to channel and put in order the food sector. large quantities of products were elaborated with no (quality supervision)*. Therefore they decide to contact the National Institute of designation of origin of the Ministry of Agriculture , fishing and cattle herding of Castilla and León. With the goal to create a managing body to regulate and shelter all products elaborated in the area. A few years later D.O.P.Guijuelo is created in 1986.  This is the first Designation of Origin of iberiam hams created in Spain.

It is Developed with the main goal of creating a regulation that will certify all hams and foreleg, elaborated in the area, endowing them with the highest standards of quality. This non-profit managing body has two main functions;

1. Control the process of certification of products protected by the D.O.P during all the elaboration proceasure from the start to the purchase by the consumer.

2. To provide development of the products as well as to inform the consumer of the fulfillment of all the different impositions from the managing body , which in this case is carried out by us.

D.O.P.Guijuelo controls  all the process from the pigs out in the fields, issuance, once the swine reaches the slaughterhouse, to its curation process including the amount of time it spends in salt or inside the Ham drying rooms and cellars.

Furthermore it controls the labeling of all products before their sale.

Beside the seals, labels and bandings belonging to our brand all products also include the Labels of D.O.P.Guijuelo to certify they are under regulation of the managing body, and a key; Certified by D.O.P.Guijuelo.
